Bhende Batata Upkari


🌿 Heat 2tbsp Coconut oil, add 1tsp Mustard Seeds, 1tsp Urad dal, when urad dal starts turning golden, add 2 broken red chillies, 1/4 tsp Hing.

🌿 Add 1/2kg chopped Ladies Finger. Mix thoroughly. Let it cook on low flame for 5-10 mins. Stir occasionally. After 5-7 mins add 1tsp salt, 2tsp Jaggery, 1tbsp Chilli Powder. Mix well.

🌿 Add 1/4 cup tamarind juice or 1tbsp pulp with 1/4 cup water. Mix well. Cover and cook for 5mins.

🌿 Once the Ladies Finger is fully cooked. Add in 2 boiled potatoes cut into cubes. Mix thoroughly and set aside.

🌿 Add in 1/4 cup freshly grated coconut and chopped coriander leaves.
