Watching the news yesterday made me reminisce about ladakh. My favourite place on earth! I've visited Chuchul and Rezang La and the War Memorial of 1962 really don't want things to repeat. As is with me, everything, memories especially are linked with food! We had the most bakwaas thukpa in Hanle, Ladakh but we were so hungry The Husband and I just inhaled the maggi omelet thukpa hybrid that a lady made for us out of pity. It was such a God send!
So I made thukpa today. I ended up making momos with yesterday's leftover parantha dough and horse gram filling.. Kulith Ke Momos if you will 😂 this dish most definitely does not exist! Dolma aunty in Leh had made atte ke momos with spinach filling for my birthday. Until then I always thought it was made with maida and cabbage only. Now I know it doesn't have to be so.
Momos can be replaced with noodles to make the recipe easier and quicker. Egg noodles, millets noodles or soba noodles are good substitutes for regular flour noodles making it a well rounded meal.
🌿 THUKPA 🌿
🌿 Masala paste - 1 onion, 2 tomatoes, 5 garlic cloves, 1/4 cup Coriander l stems and roots, 4 dried red chillies, 1star anise, grind to a fine paste.
🌿 Heat 2tbsp oil in a larger pot, add in the masala paste, stir and cook it for 3-4 mins until oil separates from the paste. Add 1.5ltrs of water. Add in chopped veggies of choice 1/2 cabbage, 2carrot, 6 large mushrooms, 2 baby corn, 1/2 cup green beans and boil for 45mins.
🌿 Serve with noodles and dumplings.
