Tofu Veggie Coconut Curry


๐ŸŒฟ Tofu Veggie Coconut Curry ๐ŸŒฟ


๐ŸŒฟMasala Paste - 
10 - 15 red chillies soaked in hot water for 2hrs
3tbsp Garlic, 2tbsp Ginger
1/4cup Onion
1/4cup lemongrass bulbs or 1/4tsp lemongrass oil
1/2cup Coriander Roots
1tsp Pepper
1tsp Salt


๐ŸŒฟ Grind everything to a fine paste.

๐ŸŒฟ Cut Tofu to desired size and sear both sides on a hot tava and keep aside.

๐ŸŒฟ Heat 2tbsp Coconut oil in a pot. Add chopped veggies - 1 Capsicum, 2 Baby Corns, 1 Carrot and Cook for 2-3 mins on high.

 ๐ŸŒฟ Add 2tsp minced ginger and garlic each. Cook for 20secs
๐ŸŒฟ Add the Masala paste. Mix and cook for 30secs

๐ŸŒฟ Add 1cup water / veggie broth and 1cups of coconut milk (200gms)

๐ŸŒฟ Taste and adjust seasoning. And bring it to a boil 5mins. Simmer for 10mins.

๐ŸŒฟ Garnish with fresh Coriander and Thai Basil.
