Made a quick Salad with leftover cooked Millets from yesterday's dinner. It's a simple Quinoa salad recipe, I just substituted the Quinoa with cooked Millets. Any millets can be used, I've used a mix here. Leftover rice or cooked lentils can also be used to make full meal in itself.
I had the hummus dressing with my salad, The Husband doesn't like hummus-mustard combo so it was a simple EVOO vinaigrette for him. He also topped the salad with some Cornflakes Hatta Meetha namkeen. My twist was 2shakes of Bhut Jolokia sauce! 🥵 Desi flavours in Videshi packaging 😂
🌿 MILLETS SALAD 🌿
1/4 cup Cooked Millets
1/4 cup chopped Cucumber
1/4 cup chopped Tomato
1/4 chopped Avocado
1/4 cup salad Greens
1/4 cup sliced Onion
1/4 cup Corn
Dressing -
1/4 cup Hummus
2 tsp mustard oil
1 tsp white vinegar
1 lemon juice
1-2 tbsp water
1/4tsp Cayenne pepper/ Chilli flakes/hot sauce
🌿 Toss everything together. Add 1tbsp dressing at a time as per requirement.
🌿 Add nuts and seeds for crunch.
