I've been away.. from Instagram, not life, coz I dunno.. life? Well my brain shuts down time to time for maintenance and this was one such occasion. So many unread messages on every app!
So! I'm back on instagram with my lunch a black rice salad with veggies, paneer stir fry, mustard microgreens and walnuts.
I had purcahsed black rice from @shrishritatva about a month ago along with their khapli atta (Emmer wheat). I had totally forgotten about it. My mum asked me yesterday what I had made with it and how it tasted. So today I decided to bring it out and make something of it. Obviously simple dal chawal crossed my mind. But fancy ingredients call for fancy dishes.. or atleast fancy looking. Amirite? 😅
I made a desi vinaigrette tadka dressing 😏 this recipe will surely be made again.
🌿 BLACK RICE SALAD 🌿
1/4 cup black rice, cooked.
1 medium carrot juliennes, cooked
1/4 cup broad beans chopped, cooked
1/4 cup yucca cubes, cooked
1/2 onion slices, raw
1/2 cup paneer cubes, pan seared
Handful of mustard microgreens
3-4 walnuts
1 Butterfly Blue Pea Flower petals
Dressing-
Heat 1-2 tbsp Ghee, add in 2 chopped green chillies, 1clove garlic, 4-5cracked black pepper, 2tsp lemon juice, 1tsp salt, 1/2tsp jaggery
Toss everything together and Eat 😀
