Made a quick brunch today as I have to prep for Gowri Ganesha festivals. I have to make a ton of Kadubu/modak for me and my mum's house as well.
It's a quick recipe, not gluten free but quick and easy. As my lovely neighbour reminded me yesterday about my gluten free diet after I told her I was making pasta π€£ I'll get back on track from next week after the festivals. It's really hard to go gluten free after so many years.
I call it pancakes coz I don't know what to call it Sooji Cheela? Sooji Uttapam? I guess it depends how you see it.. North Indian or South Indian π
Any veggies and greens can be added. I had only 1carrot and 1kholrabi left in my fridge, so that's what I added. Spinach, Amaranthus or Dill leaves will be a great addition to this batter. I did add about 1/4cup of coriander after clicking pics. The batter was just too plain without greens in it. I made a quick green chutney with the Coriander scraps, Green Chillies and Ginger.
We had it with green chutney, tamarind dates chutney and kanji pickled veggiesπ I have a long day of Kadubu making ahead...
SOOJI PANCAKES
Makes 8-9 pancakes
πΏ In a mixing bowl take 1 cup Sooji (semolina), 2tbsp Rice Flour and 2tbsp Maida, add 1/4 Plain yogurt and 1/4 cup water and mix well. Set aside for 15 minutes and let Sooji bloom.
πΏ Add in finely chopped / finely grated veggies of choice - Onion, Carrot, Tomato, Kholrabi, Green Chillies, Ginger, 1-2 sprigs of Curry Leaves, 1/4 cup Coriander Leaves
πΏ Add 2tsp Cumin seeds, 1tsp crushed Carrom seeds, Salt, Cracked Pepper and sugar
πΏ Add 1/2 cup water and bring batter to a flowing consistency. Make pancakes on hot tava.
