Ridge Gourd Dosa


Today's brunch is Ridge Gourd Dosa or Heerekai Dose ( Ridge Gourd Savory Pancakes). It's a South Canara breakfast dish popular around Udupi. I personally like it as it combines the taste of Heerekai Bajjis and Dose! Who wouldn't want bajjis for breakfast? That's what adult life is all about. Ice cream for breakfast πŸ˜‹

Some of the recipes ferment the batter overnight, they also call for only rice in the batter. Somehow I can't reconcile with eating just rice paste so I added split Pigeon Pea and Bengal Gram to the batter. I didn't ferment it or add any soda. I whisked the batter for a few minutes to aerate it. Next time I'll try fermenting it. Consistency should be slightly thicker than dosa batter, more like bajji batter.

Also.. peel of the Ridge Gourd can be saved to make chutney. My ajji made the best chutney. I didn't make the chutney with this dose coz it would be too much ridge gourd. Is it cannibalism to eat a veggie with its own chutney? 😳

🌿Ridge Gourd Dosa 🌿

🌿 Soak 1 1/2 cup Raw Rice and 1/4 cup Toor Dal and 1/4 cup Chana Dal for 8-10 hours.

🌿 Grind the soaked rice & dal along with 4 dried red chillies, 1tbsp coriander seed, 1/2 cup fresh coconut, 1tsp Salt, 2tsp Tamarind pulp, 1tbsp Jaggery. Grind to a fine paste with minimal water.


🌿 Lightly peel a 2 medium sized tender Ridge Gourds 300 - 400gms. Cut then into thin slices.


🌿 Dip individual slices of ridge gourd in the batter and set them on a hot pan. The sides should be touching each other. Spoon in the batter to fill up any gaps.



🌿 Cover and cook until golden on both sides.
