This Mix Vegetable Whole Bengal Gram Stew is a nice fridge cleaning out day recipe. For that matter any kinda stew even Avial, one of my favorites go to dishes on such days.
Today's stew is inspired by the Moroccan Chickpea Soup/stew. Although my stew is nothing like it's parent dish, at its heart or at least in my mind 😂 it's the same. Well I said 'inspired by'.. The Moroccan Stew has Chickpeas and Split Red Lentils (masoor dal) and mine has Whole Bengal Gram & Lima Beans. 🤷
The warm soupy, broth is the perfect OMAD for rainy gloomy grey days of Bangalore. It's so windy today that my giloy leaves that I've been drying in the sun for past 4 days almost blew away! The Husband with his giant strides overtook the wind to save them! He does have his moments 🥰
VEGGIES & WHOLE BENGAL GRAM STEW
🌿 Soak 1 cup Whole Bengal Gram or Chickpeas and 1 cup dried Lima Beans for 8-10 hours. Pressure cooker then for 4 whistles.
🌿 Prep your veggies - 2 Carrots, 2 Potatoes, 1 Beet, 1 bunch Spinach, chop and cook them to your preference.. Steamed/baked/roasted/blanched/stir fried.
🌿 In a pot, heat 2tbsp oil, add 3 cloves chopped garlic,1/2" grated ginger, 2 chopped green chillies, 1 chopped Onion, 2 chopped tomatoes. Cook for 2 minutes
🌿 Add 1tbsp Coriander Powder, 1tbsp Cumin Powder, 1tsp Red Chilli Powder, 1/2tsp Amchur Powder into the pot. Cook the spices for 2 minutes.
🌿 Add in cooked Whole Bengal Gram & Lima beans and the cooked vegetables. Add salt. Add 2cups of vegetable stock or water.
🌿 Let it simmer for 15mins. Garnish with chopped coriander leaves.
🌿 Serve with a dollop of creme fraich on top and Toasts or Pita bread or Bazlamas on the side.
