CORIANDER

Lets talk CORIANDER. Its the most widely used herb in our country. The entire plant of coriander, roots to flowers, is edible. Its most common practice to use only the leaves and occasionally tender stems and throw away the rest 90% of the plant.

Coriander has great health benefits from fighting inflammation, heart health, blood clotting to improving blood. It is rich in vit K, vit c, manganese, magnesium, Iron and lots more. It may not be the top source for any of these Micronutrients but a daily helping of coriander will atleast keep you in steady supply of these rare nutrients. 

Coming to the flavour aspect, the stems and roots have a more stable flavour than the leaves. Coriander leaves lose essence after a few hours and its totally non existent the next day. The flavour from stem and roots tolerates cooking process, reheating and refrigeration. 

So, how to use Coriander? The stems and roots can be used in any masala that we grind be it for Sambar/Rajma/Kootu/Ghiya Sabji/Salna even in Biryani's Shorba. 

I personally make a chutney and save it in fridge. I get a big bunch of coriander, The Husband and I spend an evening cleaning it. I store the leaves in a zip bag and make chutney with the stems and roots. This chutney can be used as is with parantha, pakora, sandwich, chaat, or used as an ingredient in any other dish I earlier mentioned dal, sabji, rajma etc.. 

I have used this chutney in my Indrahari chaat, as a chutney on the chaat and as in ingredient in the dal batter. I also mixed this chutney into my thalpeeth dough, Neer Pundi buttermilk, Kothambri Vadi. Recently I made Fuljar Soda with it. You can also make gol guppa pani. The uses of this chutney is endless. 

CORIANDER CHUTNEY

Coriander Stems and Roots
Green Chillies
Ginger
Salt

🌿 Soak coriander bunch in water for 5mins. Thoroughly wash off any mud. Drain water and repeat until water runs clear.

🌿 Cut all ingredients to small size and grind all ingredients to a fine paste with minimal water.

🌿 The chutney should be a little salty as it acts a preservative as well. 

🌿 If using the chutney as an ingredient, please keep the salt and chilli in mind before adding more.
